Date - Nut Layer
150g peanuts
75 g medjool dates, pitted
1/2 tsp maca powder
1/4 tsp salt
Caramel Layer
1/2 tbsp coconut oil
1tsp maca powder
1.5 teaspoons coconut sugar
2 tbsp hazelnut butter
Chocolate Mousse Layer
4 tbsp @meraki_superfoods chocolate protein
1/4 cup + 2 tbsp water
1/4 cup melted chocolate
In a blender/ food processor, process the dates, peanuts, maca & salt until the mixture clumps together. Transfer the mixture to a loaf tin lined with baking paper. Press the mixture down evenly with your hands. Set aside. Heat a small saucepan over low heat. Add the coconut oil, Macadamia, coconut sugar & hazelnut butter and stir until evenly combined. Allow to cool for 15 minutes. Pour the hazelnut caramel over the date & nut layer & let sit for 30 min in the refrigerator. In a small bowl, mix the chocolate protein, water and melted chocolate until it forms a thick mousse. Remove the caramel and date mixture from the fridge and scoop the mousse on top of the caramel layer. Return to fridge for at least 2 more hours before cutting into even slices.
