Lemon & Poppyseed Superfood Bites
These little lemon disks are packing some serious goodness!
Firstly they taste like dessert yet contain no refined sugar - yes please!!
Secondly they include the most amazing superfood- Camu Camu powder 🙌Made from a sour berry similar to a cherry, 10g of this small but mighty superfood can provide over 550% of your RDI of vitamin C!! Ingredients:
🌱Wet
* 1/3 of a cup of melted coconut oil
* 1/3 of a cup of maple syrup
* Juice from 1 lemon
🌱Dry
* 3/4 cup of shredded/desiccated coconut
* 1.5 cups almond flour
* Zest from one lemon
* 2 tablespoons of poppyseeds
* 1 Tsp turmeric powder (don’t skip this, its amazing)
* 3 Tsp Camu Camu powder from @meraki_superfoods
Method
➡️Mix the dry ingredients together in a bowl
➡️Add the wet ingredients and stir to combine
➡️Press into a lined tin and chill in the fridge until set
➡️Cut into squares or use a cookie cutter to make disks like I have, you could also roll these into bliss balls.
❤️Optional - drizzle with a little lemon icing and sprinkle with extra poppyseeds, looks pretty!!
❤️Store in the fridge.
