~ Choc-Coconut Slice ~
Ingredients
- 150g dried pitted dates (soften in boiling water for 10mins)
- 1/8 cup cacao
- 1/2 cup shredded coconut
- 1/8 cup chocolate protein powder @meraki_superfoods
- 1/2 tsp vanilla extract
- 1 tbsp peanut butter
- 1/2 cup nuts (of choice e.g walnuts/almonds/cashews/brazil)
Topping
- 100g dark chocolate
- Shredded coconut
- Buckinis
Method
1. Place all ingredients, apart from nuts, into a food processor & process until combined.
2. Add nuts & pulse a few times until nuts are roughly chopped & distributed throughout mixture.
3. Press into a (lined) slice tin & chill for approx 1 hr.
4. Melt chocolate in microwave, pour over top of slice & spread to create a topping, while chocolate is still warm, sprinkle with shredded coconut & buckinis. Place back in fridge for another hour.
5. Slice & enjoy! Store in an airtight container in the fridge.
