Yes you heard it right... this is a great one for kids never mind the adults.. Gluten free, vegan crumpets & cream cheese and a whole lot of colour. 

We have popped down how to make your own crumpets & vegan cream cheese however shop bought would also be ok if you are pushed on time.

ngredients
🌈vegan cream cheese
🌈hibiscus Powder
🌈Moringa Powder
🌈Blue Spirulina
🌈Coconut yogurt
🌈Coconut Sugar or maple syrup

How To Make:
Divide cream cheese between 3 small bowls.
Add 1/3 tbsp of coconut Sugar to each bowl.
Mix some 1/2 Tsp Hibiscus Powder into the first bowl 1/3 coconut yogurt & dollop cream cheese
1/4 Tsp Blue Spirulina Powder & 1/3 coconut yogurt & cream cheese into the second bowl
1/2 Tsp of moringa powder & 1/3 coconut yogurt third bowl & cream cheese into the third bowl.
Mix well in each bowl

Toast Crumpets then Using a knife or spatula, spread the coloured cream cheese on the crumpet colour by colour in order to create some multi colour swirls.

Tip: Add as much powder as you want in order to achieve the desired colours–add more if you want the colours to be more vibrant or less if you want them more pale.

 

Vegan Cream Cheese Recipe

  • Tofu -Firm 
  • Refined Coconut Oil 
  • Apple Cider Vinegar 
  • Salt - for flavor.
  • Nutritional Yeast 

Directions 

  1. Drain and press your tofu very well getting out as much liquid as possible.  You can just squeeze it with your hands because it will get all broken up anyway.
  2. Put the pressed tofu into a medium-sized bowl.
  3. Add melted refined coconut oil, apple cider vinegar, nutritional yeast, and salt.
  4. Blend with an immersion blender for about 2 minutes working all the ingredients together until it's smooth and creamy.

Done!!!! super easy super cheesy!!

 

Crumpets Recipe  - if you feel like giving it a whirl 

Equipment

  • Silicone egg ring

Ingredients

  • 1 tbsp dried active yeast
  • 1 tsp Coconut sugar
  • 50 ml warm water
  • 250 g wholegrain flour
  • 1/2 tsp bicarbonate of soda
  • 1 tsp salt
  • 250 ml lukewarm plant milk

For greasing and frying

  • olive oil

Instructions

  • Place the yeast, sugar and warm water in a bowl and stir until both the yeast and sugar have dissolved. Cover with cling film and leave in a warm spot for 15 minutes.
  • After 15 minutes, sift in the flour, bicarbonate of soda and salt, pour in the milk and whisk to combine.
  • Once there are no lumps, cover it with cling film and place in a warm spot for around 35-40 minutes until bubbly.
  • Grease a frying pan with a little oil and heat over low heat. Lightly grease a 7-8cm diameter egg/crumpet ring and place on the pan. Spoon batter into the ring so it comes halfway up the sides and fry for around 5 minutes until the tops look dry.
  • Take the ring off, then flip over and cook for 1-2 mins until golden and firm. Repeat with the remaining batter.
  • Serve toasted.
